Creamy Cajun Sausage & Peppers Pasta

The Cajun pasta you never knew you needed! Completely guilt-free and so so good!


I have made and posted this dish a few different times, tweaking things here or there. A one skillet dish that can be so versatile is my favorite kind of recipe! After lot's of trials, I finally have the best combination of spicy and sweet with all of the elements of the perfect comfort meal.

The recipe is gluten-free, grain-free, dairy-free and sugar-free. I prefer Perderson's Natural Farm's No Sugar Added Cherry Chipotle Sausage for the perfect tang and smoky flavor.


Anyone can whip this meal up in under 20 minutes! Simple, clean ingredients with big flavor makes this dish a winner every time!


 

Ingredients


2 Links Precooked Sugar-free Sausage, Sliced

2 Cups Mixed Peppers, Frozen

1 Tsp Olive Oil

1/2 Tbsp Minced Garlic

1/2 Tsp Salt

1/2 Tsp Fresh Cracked Pepper

4oz Grain-Free Spaghetti Pasta (Jovial Pasta)

1/2 Cup Spicy Marinara, Calabrian Chili (Mezzetta)

1/4 Cup Coconut Milk

1 Tbsp Italian Seasoning

1/2 Tbsp Cajun Seasoning


Sauté garlic and olive oil in a large pan or cast iron skillet the garlic is fragrant over medium-high heat. Add sausage to the pan and cook without stirring for 3-5 minutes. Toss the sausage and continue to cook until lightly browned. Mix in peppers, Italian seasoning, Cajun seasoning and salt and pepper. Once the liquid has reduced from the peppers, pour in the marinara sauce and coconut milk, stir until combined. Turn down the heat and let sauce simmer for 5 minutes.


Add cooked (al dente) pasta to the pan and toss until pasta is coated. Add some of the pasta water to thin out your sauce if needed. Once combined, serve immediately and dig in!
