Healthy Pizza Quesadilla

Isn't this the school lunch we all wished we had?



Let's be honest, you can stuff anything into a quesadilla and it's going to be pretty dang delicious! Let me tell you though, there is something special about these flavors. If you are watching what you eat, this will satisfy all of your ooey gooey pizza cravings.



 

Recipe


Ingredients


1 low carb or grain-free tortilla (my favorite is by Siete Foods)

2 tbsp no sugar added pizza sauce

1/2 cup low fat mozzarella cheese

8 slices of uncured turkey pepperoni

Handful of fresh spinach

2 tsp of Italian seasoning

1/2 tsp of salt

1/2 tsp of garlic powder


Instructions


Heat a nonstick skillet over medium high heat and coat with cooking spray. Spread the pizza sauce in a thin layer on the tortilla and place in the skillet. Sprinkle one half with 1/4 cup of cheese. Spread the pepperoni, spinach and seasoning on the same half. Top with the other half of the cheese. Fold the tortilla over and cook on one side until cheese is melting and the tortilla begins to brown. Flip over and cook on the other side for 2-3 minutes more until tortilla browns and cheese it fully melted. Repeat with remaining quesadillas.


You can also make full-size quesadillas instead of folding the tortillas in half. Just spread the topping across the whole tortilla and place a second tortilla on top.
