Bacon, Egg & Cheese Avocado Toast

A cleaned up and unique spin on my two favorite breakfast dishes! Bacon, Egg & Cheese and Avocado Toast!

Ingredients


1 Small Avocado, Mashed

2 Slices Sugar-Free Bacon (Pederson's Natural Farms)

1 Tsp Fresh Lemon Juice

1/2 Tsp Kosher Salt

1/2 Tsp Freshly Ground Black Pepper

1/2 oz. Goat Cheese

2 Slices Whole Grain Bread, Toasted

2 Tsp Extra-Virgin Olive Oil

2 Eggs


Optional: Everything but the Bagel Seasoning, Crushed Red Pepper



Instructions


Cook bacon in a skillet, microwave or oven.


Heat the 1 tsp of oil in a non-stick skillet over low heat. Crack an egg into a bowl and slowly add it to the skillet, one at a time. Cook and cover with a tight lid, about 2 minutes. Once egg whites are solid, slide out of pan and set aside.


Mash avocado with lemon juice, remaining olive oil, salt and pepper. Once smooth, stir in goat cheese. Toast bread and load with avocado mixture, bacon and top with an egg.


Sprinkle crushed red pepper and/or everything but the bagel seasoning on top.


Serve immediately and Enjoy!
