The spicy and sweet tastes of this sweet potato chicken sausage skillet is sure to be your new breakfast favorite!

Ingredients
2 links of precooked chicken sausage, sliced into rounds (I prefer Aidell's chicken apple sausage)
1 tbsp olive oil
1 onion, chopped
3 sweet potatoes, peeled, chopped into 3/4 inch cubes
2 cloves garlic, minced
1/2 tbsp cajun seasoning
1 cup fresh spinach
kosher salt and freshly ground pepper to taste
4 eggs
Optional: hot sauce, avocado or fresh parsley to garnish
Instructions
Coat your pan or cast iron skillet with oil and heat until medium high. Place diced sweet potatoes in a large skillet, stirring occasionally, until lightly browned, 8 to 10 minutes.
Reduce heat to medium. Add the onions, garlic and chicken sausage, cook about 5 minutes. Add the spinach, salt, pepper, and cajun seasoning until well combined. Cook until potatoes are tender, about another 5 minutes.
Create four “holes” in the skillet and crack an egg into each one. Add more salt and pepper over the eggs.
Finally, cover the dish with a lid, and cook until the whites are opaque, about 8 minutes. Serve hot.
